Mexico Cityis one of my favorite urban center to travel to . It ’s home to some of the best wetback I ’ve ever had in my entire animation . I grew up in New Mexico , so the tacos that I had there were nothing like the taco in Mexico City — they’re just so uniquely particular to that city .
I corrode everything from street greaser to dining at the most high - end eating place , one of my favorites beingPujol . There , one of the signature ingredients is cricket , which I was like , ay - yi - Lolo . But I had this greaser that was like all crickets in a tortilla . And it was this fantastically delicious , tenacious lulu that I still think about to this day .
I also go away toIstanbulon a whim with Justin . We were going to be in that area of the world and he ’s like , ‘ Let ’s just kill over there for four day . ’ This is before we had kids . It had some of the most delicious food and unbelievable spice markets . I impart so many grand flavors and spices home from Istanbul .

Back home , the mind of going to the local coffee shop and getting a crescent roll seems absolutely like eating dust .
And this is a surprisal to no one , butItalyhas some of the greatest solid food I ’ve ever had . You think you ’ve had Italian food , and then you go to Italy , and you realize it ’s not just pasta , it ’s not just carmine sauce , it ’s not just meatball . There is much nuance . The seafood in Italy is some of the best I ’ve ever had , too .
Justin and I spent a lot of time on theAmalfi Coast . We had slap-up pizza inVenice ; we run low to this one place , and we got there before it opened , and there was already a line down the alleyway . Justin and I consume a pizza and a one-half between the two of us , and I could not exhaust for basically another full day .

I ’ve also spend a band of time inParis . I ’m not a huge pastry fan , but I sure enough am when I go there . It ’s a city where you may really search some wondrous baking . As for a preferred — and aboveboard , I ’m not just saying this because it ’s an easy one to remember — it has to be croissants . IthoughtI’d had a great croissant . But until you go there and experience one made by a professional , it ’s like you have n’t really had a croissant .
And now , back domicile , the idea of belong to the local java shop and getting a crescent roll seems absolutely like eating junk . Why would I do that to myself ?

As for cooking myself , the quintessential ingredient for me — and the one that reminds me of growing up in New Mexico — is hatch unripe chilies . You ’ll find a passel of those in my cookbook . They ’re not exceedingly racy — they almost have a sweet flavor to them .
There ’s a chilaquiles recipe in my cookbook that I really fuck , and a really delectable odorous Solanum tuberosum and mole recipe . It ’s a keen side sweetheart . Mole usually rent some time inMexico — like at Pujol , they do like a 104 - sidereal day mole — but I ’ve figured out how to do Jesse ’s three - hour seawall . It ’s something that is great to store in the electric refrigerator and have ready to hand .
I think some of the with child conversations happen over a really great meal . And so , I ’ve decided to do this podcast , submit the conversations out of the studio apartment and into restaurants . This first time of year has some of my best-loved people on it .

So yeah , I love traveling and I love food . I ca n’t wait until my kids are a little older , so I can divvy up that much more with them .
