Thrillist talked to Adlon about intellectual nourishment , persuasion , and why she thinksBetter Things ’ heart lies smack in the middle of Sam ’s kitchen .
Thrillist : Why was it so important to you to admit food for thought in the show ? And not just food , but the act of cooking it , of eating it , of share it , and beyond . Pamela Adlon : It ’s a raw part of the manner I female parent . Really , the turning point was when I made the lasagna with Duke in Season 2 . [ In real life ] I had started prepare lasagna from wampum with fresh pasta sheets and I was learning about bechamel sauce and all the different kinds of lasagna , like meat versus no meat . I also learned to make it starting in the break of the day , and that it was a daylong process . I wanted to show the summons , and I know that I wanted to do the setting with Olivia [ Edward , who plays Duke ] . Mikey [ Madison , who plays Max ] come in the room and we say all this crazy shit but we ’re still making the food . So , after we shot the scene , I just say , " I ’m going to make the lasagna . Just shoot me make the lasagna . "
A really fun fact is that one of my photographic camera manipulator — Forrest Stangel , who ’s been with me since the beginning — was a food photographer for Food web . And so I had this fillip of Forrest being able to make shots that I lie with . It was kind of like this perfect lightning - in - a - feeding bottle moment . It was the making of the lasagna and then intercutting it with Arnold Hall [ Rade Serbedzija ] conducting , and we were off to the slipstream . I never wanted the food to look point . I always want it to look like it had been cook . I want to see steam coming off everything , and I want the potbelly to be awake . I need water to come out of the sink . I want the light to go on in the fridge . The only thing that ’s not veridical , cooking - judicious , on set is that the oven does n’t combust , but we ’re capable to use everything else .

You use the show ’s kitchen so innately , like you know where everything is and you ’re not fumbling around trying to image out where they put the forks . How did you see that?I did have some here and now in that kitchen where I ’m opening drawer and there ’s just nothing or I ’d chance upon that everybody put their [ handwriting ] in one drawer .
It was kind of a leap from Season 2 to 3 when we built the house and the set , where I said , " Do n’t have anything that is n’t alive , " whether it ’s in the cabinet or on the sideboard . For example , I love vintage glass and stuff like that , but they would get these beautiful vintage glass salt and pepper shakers that were 40 days older and from a storage unit . You would n’t want to use that salt in something you ’re going to eat up or put on your food . I just wanted to have good wine , sound olive oil , full balsamic and all of the supply , so much so that at the end of this season when we wrapped the whole show , the work party get to take home all this beautiful pantry intellectual nourishment and condiment .
Did you learn anything about food scaffolding from the show ? Like , " oh , we should utilize clean plates because food does n’t look dependable on dark shell . " " present your ladle to the camera , " stuff like that?It was all just me being highly nitpicky , and my aesthetic about things . If I ’m wee something or pouring something into a pan , I ’d just be wait for the tv camera guy cable to set to get the best slant where we could see sunshine coming through the window so that it would jounce off the steam , and we could see the intellectual nourishment pour in . Those are all things that I get off on , because it ’s all an opportunity .
I made an Easter cake for time of year 3 when we were going to the party . You see Sam making this cake , so I really wanted chocolate bunnies fromEdelweiss , which is this place in LA that is Graeco-Roman . I used to go there as a tike , and it ’s where Lucille Ball was inspired to do the conveyor belt umber bite fromI Love Lucy . But we shoot that scene in the fall , mayhap . There were no Easter bunny girl in stores . I read to the prop guy , " Call Edelweiss . I bet we could get a chocolate bunny girl from Edelweiss . " And then I made the patty and I put the bunny mighty on top of the patty because I was just make shit up . But it looks beautiful , and it looks cool , and is also extremely edible .
And that makes sense with what you ’re making on the show , which is homey , not fussy intellectual nourishment . You ’re not painstakingly craft petit foursome or something . I just thought , “ Here ’s this woman who is a single mom of three and she ’s finding time to provide intellectual nourishment for her mob . It ’s showing the great unwashed that this is easy , and it ’s actually way more cost - effective , less wasteful , and more delectable than getting takeout . Loveless food has no taste . ” Somebody asked me once a few age ago , " What ’s your favored kind of solid food ? , " and I said " home - cooked . " There ’s nothing better .
When I watchBetter Things , I see the kitchen being used as a place where power dynamics can shift , like when Sam gets too high and Frankie makes her peppermint ice cream , or when Xander takes over the kitchen in Sam ’s absence to make his famous runt looker . Does that ring dead on target to you , that transfer of power and phase in life?I really want to show Frankie cookery in Season 3 . Sam wakes up at 4 in the morning and smells something , so she goes in the kitchen and Frankie ’s produce carbonara . That ’s pregnant , when a kid that age knows tongue acquirement and can cook and make a meal . It was so electrifying to see Sam ’s kid take over the kitchen .
In term of Xander coming over , it ’s like a repugnance motion-picture show . He reach into the Deepfreeze like he ’s going into her underclothes drawer , and he ’s in there forever and a day , just feeling around before he pulls out that shrimp . My editor in chief and I , when we look on that , we scream . We were eating popcorn like we were at a repugnance movie . That ’s Sam ’s blank space , so it ’s a whole different vibration when he take over and it ’s a signal of his entitlement as pit to a baron move . I imply , that ’s the hub . The wink of that whole house is that kitchen .
Are there foods that you ’ve made on the show that you ’ll always associate with the show and with your experience there ? Or even that you ’ve had off - concealment that make you think of makingBetter Things?I’ve incorporated so many food that I make into the show , so it reminds me of my own home and the meals that we have at home .
It ’s sport to watch the show as an Angeleno and recognize the restaurants you go to . How did you pick what those will be?I did n’t require it to be like a show where characters are having lunch and you do n’t know where they are . There ’s no significance . Even if it ’s a eating house that I made up , like in time of year 3 when Sam ’s with Rich and they ’re at this Nipponese eating place and he ’s like , " Oh , my God , I can never get a reservation here . " And this mob next to them has a service department sales agreement on the table , with toys and Good Book and the mother is reading a news report . It ’s like , the most disruptive thing , but you ’re talking about how the restaurant is , so you ’ve commence to include all that .
You do n’t just desire food for thought to have no meaning . It ’s an chance in the show , just like euphony , graphics , clothing , or article of furniture . Everything ’s an chance to be something that is more than just whatever you ’re settling for .
